You know that frugal feast I mentioned – seared salmon, spinach, and salad?
It was served with red potatoes sautéed with onion, bell peppers, and rosemary. Easy, fast, healthy, and delish! Mmm… I love that fresh dill sprinkled on the fish just before it goes on the plate. (And I sneak a few walnuts into the salad. Soooo good.)
I will admit – I don’t exactly “plate” like a Top Chef Master, but then hungry teens don’t care if it’s neat, just good, fast, and plentiful!
